Factoid of the Moment

(Mushrooms) can produce vitamin D — a trick almost no other food can pull off. Vitamin D is important for immune function, heart health and muscle strength, but it’s naturally found in very few foods. Most mushrooms in the grocery store don’t contain much of it either, since they’re typically grown in the dark. “But if your mushrooms sunbathe, they can produce vitamin D like humans can,” said Dr. Tim Spector, an epidemiologist at King’s College London.
